This technical report aims to demonstrate the importance of project management in the food industries with problems with permits, organization and management, presenting various risks of survival in the market.

Performing good management on projects within organizations is very relevant, because when companies invest capital in new activities or projects they want security and quality in what is being carried out and for this to be necessary, there must be a clear and succinct way control over these operations

A technical analysis of the situation was carried out, identifying the main risks, such as, logistics, suppliers, commercial, use of the brand and default. A work schedule was established using Canvas to have a view of the whole process, after Scopo's vision was structured with the EAP, then the schedule of activities developed by the Projec Libre Program was used, from there the "management of projects reached the objective through the phases: initiation, planning, execution, control and completion.
Main results
From the realization of this detailed study on a food company, it was possible to identify the main problems that occur in companies today because it is a real case, the intervention performed, with the case study and its identified risks, led to the adoption of control and management methods.
Theoretical / methodological contributions
Analysis and management of risk, time, cost, scope or quality are uncertain factors that, if they occur, will have a positive or negative effect on at least one project objective. Risk management is one of the main activities in the organization's processes, it is part of the management's responsibilities, of the development and success of any company, from the perspective of strategic planning and all project management and trust management processes.

This study is applicable in project management with the necessary tools according to each company, and can be used in large and small companies in this segment or similar branches.
